Snowball Cookies

A favorite of Christmas time

Preheat oven to 325 degrees

Ingredients

• 2 cups  all-purpose flour
• 2 cups finely chopped pecans
• 1 cup butter, softened
• 1 t. vanilla extract
• 1/4 cup granulated sugar
• powdered sugar for rolling

In a large mixing bowl, combine flour, nuts, granulated sugar, butter and vanilla. Beat at low speed, scraping bowl often until well mixed. Shape into one-inch balls. Place on parchment paper lined cookie sheet. Bake for 20 minutes. Remove from cookie sheet and allow to cool onack. Roll in powdered sugar while still warm, and again when cooled.              

Makes about 3 dozen cookies.
